It's time to get into the holiday spirit with these peppermint whoopie pies. These are super fun and easy to make and will look amazing on a holiday dessert table.
Peppermint Whoopie Pies:
Is there anything better than the combination of chocolate and peppermint during the holiday season? I used to hate all things peppermint as a kid, but as an adult it's become one of my very favorite flavors. These holiday whoopie pies are super easy to make because you start off with a cake mix to make the base, and then make or use a store bought frosting for the insides. The you simply roll the edges of the whoppie pie into some crushed candy canes and you have a delicious treat in no time!
The Easy Way to Make Whoopie Pies:
There is a hard way to make whoopie pies that involves making the cake and everything from scratch. The easy way, and my preferred method is to simply use a store bought cake mix. For this recipe I prefer a devils food cake mix, but honestly any cake can work for this recipe! If you wanted to do a fall theme you could use a spiced cake mix, and adapt to your own flavor preferences.
Canned vs Homemade Frosting:
This is totally up to your own preference. If I'm in a hurry I will use a store bought frosting and whip it up to make it fluffier in my stand mixer. If I have a bit more time I'm totally okay with taking the time to make a homemade buttercream frosting. The key to any good frosting is taking the time to whip it really well with your mixer, store bought or homemade, the more you whip the better it will be!
The Easiest Way to Crush Candy Canes:
The easiest way to crush your candy canes is to peel all of the wrappers off and then place them inside a ziplock bag. Once they're secured start hitting the bag with a rolling pin until your candy canes are broken down into small bite size pieces that won't hurt your mouth when you bite into them.
You can also purchase crush candy canes if you want to save yourself the effort of this step. In my family we take the easy way for everything, no judgement here.
Ingredients for Peppermint Whoopie Pies:
- 1 Pillsbury devils food cake mix
- 1/4 cup water
- 3 tablespoons veg. oil
- 2 eggs
- 2 cups crushed candy canes
- 1 Store bought container of vanilla icing
How To Store Whoopie Pies:
Whoopie pies are best eaten 1-2 days after making them. The are safe stored on the counter for up to three days, but I would not recommend eating them after that point. Whoopie pies cannot be stored in the freezer to preserve them. The frosting will break down in the freezer and they will not taste the same once thawed.
