Super easy rocky road fudge is the perfect recipe to make when you need an easy no bake fudge recipe for any occasion.
I've been making many different variations of this super easy fudge recipe for years now. Back in 2012 I shared a White Chocolate and Peppermint Fudge recipe, and then I shared this Super Easy Reese's Fudge recipe back in 2013. I've been making some variation of this recipe for the last eight years because the recipe is so easy to make and only takes a couple of minutes.
Last week I found myself craving some chocolate, and when I found all the ingredients in our pantry to make this Super Easy Rocky Road Fudge, I knew I needed to give it a go! It turned out perfect, and will definitely be a repeat recipe in our home!
What You Need To Make Super Easy Rocky Road Fudge:
The base for this fudge recipe starts off the same as the other fudge recipes that I've shared on my blog. You need one 12oz bag of chocolate chips, and one can of sweetened condensed milk. It's seriously that easy. You can use any chocolate you like too. Milk, semi-sweet, white, etc... I've tried them all and they all work perfectly. For this Super Easy Rocky Road Fudge recipe though, I went with milk chocolate chips. For the mix-ins I used 3 cups of mini marshmallows, and 1 cup of chopped peanuts.How To Make Super Easy Rocky Road Fudge:
Once you have all your ingredients together, making Rocky Road Fudge is super easy. In a medium size pot on the stove over medium heat you're going to throw in your twelve ounces of chocolate chips and your can of sweetened condensed milk. Stir them together until everything is melted and combined. Then remove your pan from the heat and stir in your mix-in ingredients (peanuts and marshmallows), and then pour in a pan and chill in the fridge until your Rocky Road Fudge has hardened. Super easy rocky road fudge is the perfect recipe to make when you need an easy no bake fudge recipe for any occasion.
Ingredients:
- 1 12oz bag chocolate chips
- 1 10oz can sweetened condensed milk
- 1 cup chopped peanuts
- 3 cups mini marshmallows
Instructions:
- Start by lining an 8x8 baking dish with tin foil and spray with nonstick cooking spray.
- In a pot over medium heat mix together the chocolate chips and sweetened condensed milk. Stir continually to make sure none of the chocolate burns at the bottom.
- When the chocolate chips and sweetened condensed milk are evenly melted together remove from heat and stir in your peanuts and marshmallows.
- Using a rubber spatula spread the mixture into your prepared pan evenly and chill in the fridge for 2-4 hours until chilled and set.
- Cut evenly into squares and enjoy!
