I spent the first few weeks of quarantine eating too many Pop-Tarts and other junk foods, and woke up Sunday morning craving a smoothie bowl. We didn't have any granola in the house though, and a smoothie bowl without granola sounds a bowl of sad sins, so I went to work and made this super simple granola.

We luckily had all of the ingredients for this simple granola recipe in our pantry. All you need are oats, almonds, maple syrup, oil, salt and cinnamon. Luckily we keep all of these ingredients on hand as part of our food storage, but you can adapt when needed as well. You could replace the almonds with any nut, replace the syrup with honey, use any oil you have on hand, etc...
How to Serve this Simple Granola Recipe
This simple six ingredient granola can be eaten on it's own with some milk as a bowl of cereal, topped on smoothie bowls, placed in salads, mixed into baked goods, or eaten with yogurt. You could also use it as a topping for baked apples. A fun treat my kids love is dipping bananas in yogurt and then roll them into the granola, and free them. I've also seen people mix granola into their muffin batter and bread mixes, which is something I really want to try!
How to Store Homemade Granola:
You can store homemade granola in an airtight container for up to six months. Be sure to store in a cool dry place, such as a pantry. If you add nuts to your granola, just make sure they're fresh since they have a high oil content and could go rancid, causing the granola to go bad. My almonds didn't expire until Jan 2021, so I know we'll eat this long before we hit that shelf life.

Ingredients
Simple Granola Recipe
- 3 cups oats
- 1 cup sliced almonds (or 1 cup of any chopped nut)
- 1/3 cup maple syrup
- 2 tbsp oil (coconut, olive oil, vegetable oil, any oil will work)
- 1 tsp salt
- 1 tsp cinnamon
Instructions
- Preheat the oven to 300º.
- While the oven is heating, mix together your oats, almonds, maple syrup, oil, salt, and cinnamon in a large bowl.
- Once everything is well mixed, spread it out into an even layer on a large baking sheet.
- Bake in the oven for 45 minutes. Allow to cool on the pan for 20 minutes before breaking the pieces apart. Store in an airtight container in your pantry for up to two weeks.
