I had a little mishap at the beginning of the week that has left me with a minor concussion. It was just a random freak accident, but I'm definitely still feeling the effects from it. Derek and I have been doing a lot of research on the best way to recover from a concussion, and as it would turn out (like most things in life), one of the best ways to aid recovery is with wholesome, whole foods.
Derek went back to work yesterday, so I've been on my own to prep food for the kids and I while he's gone. I figured making some energy bites would be a great, quick and easy way to have snacks on hand, that were also healthy.
There are a lot of energy bite recipes on the internet, but the best one in my opinion is one that you already have all the ingredients for. These energy bites come together with just six simple ingredients, and they taste awesome. While you could certainly add more things like chia, flax, or collagen to up the nutrients, these are just a simple and awesome base to get you started.
Ingredients:
1 cup old fashioned oats
1/2 cup peanut butter
1/3 cup raisins
1/4 cup shredded coconut
1 tsp vanilla
2 tbsp honey
Directions:
Combine all ingredients together in a bowl. Using a 1 1/2 tbsp cookie scoop, scoop out the mixture, and then roll it into your hands to form balls. Your hands will get messy, and you really have to pack the mixture together to get it to hold it's shape, but they will come together!
Once your balls are formed, place them in an airtight container in the fridge for up to one week. Recipe should yield about 12 balls.
