Quick and Easy Sweet and Sour Chicken

It has been a hot minute since I did a recipe post over here. The main reason is that with marathon training, my new calling at church, and then the kids both being in extracurricular activities, we've mostly been living off of breakfast foods and frozen dinners the last couple months. I honestly don't really remember when the last time I made a meal from scratch was. 

When we were in St. George for The Sun Half Marathon that I ran in February, we stayed with my friend Michael's parents, and Sunday afternoon for dinner before we left, his mom made this really great sweet and sour chicken recipe. It was seriously one of the best meals that we had in a long time. When we got home from that trip Derek told me, "You really need to get that recipe from her", and she promptly sent me the recipe. Two months later, and I've finally gotten around to making it, and am pleased to report that it tastes just as great as we remember. 

 Ingredients:
1lb chicken, cut into 1 inch pieces
1 cup pineapple tidbits, drained
1 green pepper, diced
3 tbsp vinegar
2/3 cup water
1 tsp oil
1/3 cup sugar
1/2 cup ketchup
1 tsp salt 

Directions:
Cook the chicken in a large oiled skillet on medium high heat. While chicken is cooking, add the green peppers. In a separate bowl mix together the vinegar, water, oil, sugar, ketchup and salt. When the chicken is almost cooked through, add the sauce and bring to a boil. Add in pineapple, and continue cooking until the sauce is thickened. Serve over rice.
