Three Easy and Delicious Weeknight Meals

Derek and I have had this struggle in our relationship over the last five years where I want to make elaborate meals each night, and he just wants simple, easy, nothing fancy dinners. Most nights when I try something new, and out there, he takes a few bites, and then eats some cereal around nine o' clock before bed. This week I wasn't feeling to well, so I searched "easy meals" on pinterest, picked three dinners, made a Walmart Grocery Pickup Order (no sponsored), and called it a week. 

It is a very rare week in our home when Derek loves every meal I make. But this week, whenever I asked, "How is it?", he responded, "It's good, thanks Honey!", and then I smiled and wanted to kiss his face off because those four words are like music to every wife's ears. So if you're needing some easy and delicious meal ideas for your next week's menu, consider adding one of these, because they're all very delicious. 

Chicken Parm Casserole by Thriving Home Blog: I actually made this in the slow cooker instead of the oven, and it came out great! I threw about three small, frozen, chicken breasts into the slow cooker, topped it with the sauce, then cheeses, and then italian bread crumbs, and then let it cook for about 4 hours on low, until the chicken was cooked. I served it on top of some cooked ziti, and Derek even took the leftovers to work the next day. 
Crockpot Orange Chicken via The Frugal Girls: I'm going to be honest that I was actually a little scared of this combination. I knew it was either going to be really good, or awful. Luckily it was really, really good. I just threw three frozen chicken breast, and then the bottle of BBQ sauce, and the jar of orange marmalade, and let it cook on low in my slow cooker for about four house, and it was delicious. There were quite a few pieces of chicken bits and fat floating in the sauce after cooking though, so I strained it through a sieve, and then the sauce was free of particles, and was super smooth and delicious.  


Italian Chicken, Potatoes, and Green Beans by Grace and Good Eats:  We've actually made this recipe several times over the last five years, although I couldn't find the original blog that started the recipe. It was super delicious, and so easy. The potatoes are my favorite part every time.
