Oh hey there... Me again... Just showing you yet again, another one of the many skillet meals we've had lately. These are seriously becoming my favorite meals. They're easy, fast, and all inclusive. Which is perfect for when you need to make a meal fast, and you have a newborn in the house. Also I was looking at the last few recipes that I posted, and they all have this dish towel, and this pot. I promise I do have more than one dish towel... But I really do love, and use this pot daily.
Ingredients:
3 russet potatoes
1 14oz package of turkey kielbasa cut into 1/4in rounds
1 green bell pepper, diced
1 orange bell pepper, diced
1 yellow onion, diced
olive oil
salt
pepper
Directions:
Heat two tablespoons of olive oil in a large skillet over medium high heat. Sprinkle potatoes with salt and pepper and cook for 5 minutes, and then add the bell peppers, and onions, and then stir and cover. Let cook for an additional 3 minutes, and then add the sausage. Stir and cover and cook for another 5 minutes or until sausage is hot, stirring occasionally. Then serve.
I can see how nice it must be on a Momma with a new baby! I love a good skillet meal! Especially a one "big" dish meal! Nothing makes me happier than after dinner, when my husband is playing with our daughter and I am only spending 10 minutes on dishes! And then, still needing a break from our little one, I go and read because, hey, I'm already done with the dishes and it's still 30 minutes until bedtime routine starts!
