I had every intention of being a fun mom yesterday. Yesterday was going to be the day of all days. I was going to let Jay help me bake in the kitchen. I got all the ingredients out to make these cupcakes, poured them into bowls so Jay could pour them in the mixer, and then it happened. Jay went to put the eggs in the mixer and spilled 1/16th of one egg, and I sensed disaster ahead. I quickly whisked him off the counter, gave him a snack in his high chair, and finished making these cupcakes. Jay got fruit snacks out of it (a luxury for him), so I'm sure he wasn't offended that he didn't get to help that much.
These cupcakes are delicious! I mean so, so, so good. I have been wanting to make red velvet cupcakes ever since Derek brought me home my first ever taste of red velvet from a party they had at work last year. A couple weeks ago we went to a bakery down the road from us, and their red velvet cupcake was super unimpressive and I was sure I could do better at home, and this recipe delivered!
Ingredients:
2 1/2 cups flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup butter, softened
2 cups sugar
4 eggs
1 cup sour cream
1/2 cup milk
1oz red food coloring
2 tsp vanilla extract
Cream Cheese Frosting:
1 8oz package of cream cheese
1/4 cup butter, softened
2 tbsp sour cream
2 tsp vanilla extract
1 16oz box confectioner's sugar
Directions:
Preheat oven to 350 degrees F. Mix flour, cocoa powder, baking soda and salt in medium bowl. Set aside.Beat butter and sugar in large bowl with electric mixer on medium speed 5 minutes or until light and fluffy. Beat in eggs, one at a time. Mix in sour cream, milk, food color and vanilla. Gradually beat in flour mixture on low speed until just blended. Do not over mix. Spoon batter into 30 paper-lined muffin cups, filling each cup 2/3 full.
Bake 20 minutes or until toothpick inserted into cupcake comes out clean. Cool in pans on wire rack 5 minutes. Remove from pans; cool completely. Frost with Vanilla Cream Cheese Frosting.
Vanilla Cream Cheese Frosting: Beat cream cheese, softened, butter, sour cream and Vanilla Extract in large bowl until light and fluffy. Gradually beat in confectioners' sugar until smooth.
