Finally, Derek said that something I made was as good as his mom's! That's a pretty big compliment! I shouldn't make it sound like Derek hates my food. It's just when I try to make something that his mom makes, usually his mom's version wins, and then sometimes I'll be told that my version of what she makes is just as good, and that's probably the best compliment ever! This recipe was from one of my favorite blogs, Six Sister's Stuff! I love all their easy recipes that are always favorites in our family!
Ingredients:
1 pound ground beef
3 (14.5oz) cans diced tomatoes undrained
1 (14.5oz) can corn undrained
1 (14.5oz) can pinto beans (rinsed & drained)
1 (14.5oz) can black beans (rinsed & drained)
1 ranch dressing packet
1 taco seasoning packet
sour cream
mexi style cheese
tortilla chips
Directions:
Brown meat in large skillet and drain and place in crock pot. Put tomatoes, corn, beans, dressing, and taco seasoning packet in crock pot. Stir together and cook on low for 6-8 hours. Garnish with cheese, sour cream, and chips!
I did this meal as a freezer meal by cooking the meat in advanced and then putting it in a bag with all the ingredients minus the garnishes ahead of time and then froze all of it in the bag. Then the day of cooking I just took this out of the freezer and cooked it on low for 8-9 hours and it was done!
Ha ha, I'm still waiting for my husband to tell me I make something as good as his mom! I love this soup, it looks so easy and delicious!
