Peanut Butter Cookies

Today I was going to post about some apple pie chimichangas that Derek and I made for dessert last night however, a burnt hand on my part and a burnt dessert after that led to only two edible chimichangas after and terrible pictures... luckily I had a back up recipe that I could use! These peanut butter cookies are amazing and delicious! I used the recipe that my grandma always did when I was growing up! Also, want to apologize for post that may be popping up in your feed out of order, or not being there when you click on them, we're working out some bugs right now!

Ingredients:
1/2 cup peanut butter
1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 tsp baking soda
1/4 tsp salt
1 egg
1/2 tsp vanilla
1 1/4 cups flour
1 pack Hersey Kisses

Directions:
In a large mixing bowl beat peanut butter and butter with electric mixer on medium to high speed for 30 seconds. Add granulated sugar and brown sugar, baking soda, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Cover and refrigerate dough about 1 hour or until easy to handle.

Preheat oven to 375 degrees F. Shape dough in 1-inch balls. Place balls 2 inches apart on an ungreased cookie sheet. Bake about 8 minutes or until edges are lightly browned. Transfer to wire racks. While they're still hot press one Kiss in the middle and then let cool.

  1. Don't you hate it when a recipe or post doesn't go as planned? We had a few moments like that this week. But being able to roll with the punches definitely helps and at least makes us feel better. Loving this cookie recipe.
