Last year I did a post where I made the copycat recipe for Panera's Broccoli Cheddar Soup, however, today I was making soup for a friend of mine who just had a baby, and I wasn't feeling well myself, and the Panera's recipe is really involved, so I wanted something that would be easy and that I could just forget about, this recipe was, easy, simple, and delicious! It's the perfect soup to eat while snuggling up in a cozy sweater, and watching a movie on the couch on a cold fall day!
Ingredients:
2 cans cream of chicken soup
2 cans evaporated milk
2 large heads of broccoli stems removed
1 cream of chicken soup can filled with milk
1 larger carrot diced
1 small onion diced
Salt and pepper to taste
Cheddar cheese for topping
Directions:
Pour soup, evaporated milk, and regular milk into crock pot. Then add broccoli, onions, and carrots, and salt and pepper. Cook on high for 4 hours or low for 6-8. Before serving, pour 3 cups into blender, and puree, then put back into crock pot and mix in with the rest of the soup. Then pour into bowls and top with the desired amount of cheese.
