Once again, another Pinterest inspired dinner at the Flamm residence! Broccoli cheddar is one of my all time favorite soups and brings me back to the days of my short employment with Panera! You know... that delicious place with all the homemade soups, breads, and sandwiches? Oh, you don't? Oh yeah, that's because most of you guys are from Utah, which is one of the 10 states that it's not located in. Sad, I know!

Ingredients:
1 tbsp melted butter
1/2 onion chopped
1/4 cup butter melted
1/4 cup flower
2 cups half and half
2 cups chicken broth
8oz broccoli
1 cup chopped carrots
8oz sharp cheddar cheese, shredded
Directions:
Saute onion in butter. Set aside. Whisk butter and flour over medium heat for 3-5 minutes. Stir constantly and slowly add half and half. Add chicken stock, still whisking.
Simmer 20 minutes.
Add broccoli, carrots and onion. Cook over low heat until veggies are tender – about 20-25 minutes. Add salt and pepper. The soup will have thickened by now.
Carefully transfer soup mixture to blender and puree. Return soup to pot (or crockpot) over low heat. Add cheese. Stir until well blended. Add nutmeg right before serving.
Makes 4-6 servings
