I've been loving trying lots of different Halloween recipes lately. While I don't have a long list of Halloween parties that I'll be going to, I am hanging out with my friend April tonight for the first time in ages, and thought it would be fun to bake a batch of cookies before I left.
I saw these Halloween Funfetti cookies on pinterest a few weeks ago and thought they looked super fun and delicious, and figured I'd give them a try.
Ingredients:
1 (18.25) package Funfetti Cake mix
2 eggs
1/3 cup vegetable oil
2 tablespoons milk
1 teaspoon vanilla extract
Directions:
Preheat oven to 375 degrees F. Pour cake mix into a large mixing bowl. Add the eggs, oil, milk, and vanilla into the dry ingredients mixture and mix until combined. Prepare baking sheet with parchment paper and Drop teaspoons of dough onto the sheet.
Bake 7-9 minutes in the preheated oven. The bottoms will be golden brown. Move cookies to a cooling rack, cool completely before assembling.
Frost the flat side of the cookies. Top with unfrosted cookie. Roll edges in assorted sprinkles.
*I used the orange Halloween Frosting that Pillsbury makes for Halloween
