Crepes are a super fun french breakfast to make on the weekends. If you're running low on time and ingredients you can make crepes from pancake mix to make them even easier.
After Derek graduated high school he served a two year mission for our church in Geneva, Switzerland and spent a large majority of his time in France. When we got married I naturally thought that I had to be a cool wife who cooked intricate French cuisine. While I may not have ever mastered Boeuf Bourguignon, I can whip up a pretty great crepe on the weekend.
That being said, sometimes you want crepes but don't have all the ingredients, or you just need something that takes less time. You can actually make crepes from pancake mix with a few ingredients you likely always have on hand, and while they'll likely never be as good as the real thing, they do taste fabulous, and our kids had zero complaints when we made them this weekend.
What are Crepes?
Crepes are a very thin French style pancake that are made without rising agents (baking soda/powder). They come together with simple ingredients like eggs, flour, milk, salt, vanilla, etc... They differ from American pancakes in that you typically serve them with savory fillings, or sweet options like fruits, whipped cream, and of course, Nutella.
How to Make Crepes from Pancake Mix:
To make crepes from pancake mix, the one thing you're definitely going to need is a pancake mix. Shocking, I know. You can use literally any kind of mix, we used the cheap generic brand and had no casualties. Aside from your mix you're going to need 2 cups of milk, one egg, and a splash of vanilla extract.
How to Cook Crepes:
Crepes cook in a pan on the stove, and that pan needs to be hot. We typically set our stovetop to 7, or whatever your halfway mark on your stove is between medium and the highest it goes. Once the pan is hot and up to temperature, melt butter in the pan, and pour in about two tablespoons of batter. Then you quickly turn the pan in a circle by rotating your wrist to let the batter coat the entire bottom of the pan in a thin layer. After about one minute, gently flip your crepe, let it cook for a few more seconds, and then remove it from the pan. Repeat this process for all of your bater!

How to Make Crepes from Pancake Mix
- 1 cup pancake mix
- 2 cups milk
- 1 egg
- 1 tsp vanilla
Instructions
- Mix all your ingredients together in a large bowl and set aside.
- Heat a frying pan on the stove over medium high heat. Once the pan is hot, melt some butter in the pan. Once melted, add about two tablespoons of batter into the pan.
- Rotate the pan by moving your wrist in a circular motion so that the batter coats the entire bottom of the pan in one thin later.
- Cook the crepe for about 1-2 minutes, until you can gently flip it over, and let it cook on the other side for a few more seconds before removing from the pan. This process goes quickly so keep a close eye on it.
- Once your crepes are cooked, serve with strawberries, bananas, whipped cream, and nutella, or whatever toppings you'd like!
