BLT Macaroni Salad

I've been trying this new thing this week where instead of grocery shopping at the beginning of the week for the entire week, I've been going to the store everyday to get the things that we need for that night's meal. I know it sounds crazy, and insane, and impractical but I promise there was some logic behind it. 

I've been having a really hard time coming up with menu plans lately and we've been wasting so much food and money on things that haven't been eaten. Derek struggles with being able to tell me what he wants for dinner for the entire week, and if I make a cute pinteresty meal, he won't eat it because he just likes simple basic food, it's who he is. So each night this week I've just been casually asking, "so what do you want for dinner tomorrow night", and then he usually gives me some sort of idea, and then I whip it up for him and he has no clue I've been to the store a thousand times this week. Also it gives the kids and I an excuse to get out of the house and do something each day so win-win. I also promise I've stuck to the list on every trip and haven't spent excess money.

One night when I asked Derek what he wanted, he told me he had saved a recipe on his phone for a BLT macaroni salad, and that he really wanted me to make it for him. A husband who actually bookmarks a recipe is a real winner. Probably one of the cutest things ever actually. We had this on Tuesday night and it was so good. Although it did confirm that every time I eat bacon, I get sick. So I'm no longer eating bacon ever again. Derek's happy to not have to share with anyone ever again. 

macaroni salad


Ingredients:
16 ounces elbow macaroni, uncooked
3/4 cup mayonnaise
1/4 cup sour cream
1 1/2 tbsp vinegar
1 teaspoon garlic powder
1 teaspoon salt
1 1/2 teaspoons ground black pepper
8 pieces of bacon, crumbled
1 cup seeded and diced tomato
1 cup roughly chopped baby spinach

Directions:
Cook macaroni according to package instructions. Drain.
Mix together remaining ingredients, and toss with macaroni until combined.
Cover and refrigerate until ready to serve.

  3. you might like the Pioneer Women's pasta salad. She has her own show on netflix, but her blog might have recipe too if you search. It is super good as well. I also knew a lady who shopped every day for food for the night. She found it more practical for her lifestyle. Whatever works, right? Maybe try turkey bacon, less fat.

  4. Meal planning at your house sounds like meal planning over here. Except when Devin travels or busy season...which basically has been since last August, there is no one to eat with me at home. For me, a big goal is to make meals that I would want to eat repeatedly without messing up a ton of the kitchen. I might want to invest in a smaller crockpot.
