Pumpkin Pie Ice Cream!

I love fall. I think I've said this many times now, but it's true. I really, really, do! One of the main reasons is that it is finally starting to get cool enough here in Provo where I can finally start doing 10 mile runs each morning and it won't get too hot! That is one thing that I do love about Provo, you can run in the winter (because contrary to what everyone thinks here, winter is a joke compared to NY), and you can run in the fall and spring and not run into too many temperature problems. Whereas in NY due to heat + Humidity running is really only fun in spring, and fall. Anyways, since I did so a great 10 miler today I decided I would treat myself to my favorite snack, ice cream, and my favorite fall flavor, pumpkin!

Ingredients
2 1/2 tablespoon brown sugar, packed
1/2 teaspoon cinnamon
1/4 teaspoon nut meg
1/8 teaspoon cloves
1/2 cup canned pumpkin
2 cups (1 pint) vanilla ice cream

Directions
- In a small sauce pan, heat together the pumpkin, sugar, and spices, until well mixed
- Mix the pumpkin mixture into the vanilla ice cream (it will start to look soupy when you stir it)
- put in a freezer safe bowl to let harden for 2 hours, then serve!
